John says: This is a very easy dish, a few ingredients & packs a punch of flavour, Using Cabbages as the star of any dish is delicious, nutritious & high in natural iron.

Ingredients:​

  • 1x Sweetheart Cabbage​
  • 1 Tbsp Fajita Spice​
  • 1 Tbsp Rapeseed Oil​
  • 1 Tsp Cajun Spice​
  • 1 Tsp Table Salt​
  • 1 Tbsp Mild Chunky Salsa​
  • ½ tsp Chopped Red Chilli​
  • 5-6 Medium Potatoes​
  • Handful of Pumpkin Seeds​
  • Pinch of Chopped Coriander

 

Directions​

  1. Clean & wash the potatoes, skins on, cut the potatoes into wedges & steam for 6 minutes until slightly soft & allow to cook at room temperature.​
  2. Prep the sweetheart cabbage buy trimming the core, Cut into 4 quarters & remove 2 layers of the outer leaves & place on a baking tray.​
  3. Drizzle with rapeseed oil & massage the Fajita spice in the layers of leaves, Roast in a oven set at 180 degrees for 15 minutes.​
  4. Whilst the cabbages are roasting, place the potato wedges into a frying basket & fry at 190 degrees until golden brown, place onto some kitchen paper to drain.​
  5. Mix the cajun seasoning together.​
  6. Toss the cooked potatoes in a bowl & toss in the cajun salt to coat..​
  7. Mix the Chopped chilli’s into the chunky salsa.​
  8. Once the Cabbage is cooked, remove from the oven.​
  9. Place the wedges onto a plate, the fajita cabbage over the top followed by spooning over the salsa.​
  10. Garnish with pumpkin seeds & chopped coriander.
